These days, alfalfa sprouts are incredibly common on all salad bars and in grocery stores. They are considered the best natural source of vitamin K, which helps bones to mend properly. Alfalfa contains the plant world's equivalent of human estrogen, so women that are breast feeding or going through menopause may derive some benefit from alfalfa. It also is known to help keep calcium in the bones and out of the linings of the arteries, thus preventing arteriosclerosis.

Precautions:
Due to the high levels of vitamin K, large doses of alfalfa may cause antagonistic effects with blood thinners such a Coumadin. One of the biggest risks involved with using alfalfa sprouts is consuming sprouts grown in contaminated water. This is easy to avoid, never consume limp or "smelly" sprouts, and always wash them thoroughly before use.

Buckwheat is one of the world's oldest domesticated plants, going back as far as 6000 B.C.E in Northern Asia. It is a broadleaf plant whose seeds are brown and about the size of a soybean. The plant itself has slender and knotty hollow stems and heart shaped leaves with beautiful white flowers. The plant itself will average about 3 feet high at maturity. Buckwheat is grown all over the world, usually in warmer areas as it does not tolerate frost well. Flowering begins a few weeks after planting and will last until the plant is mature. The flowers themselves are an incredible source of nectar for honey bees. Buckwheat is not a cereal or a grass, but is referred to as a pseudo-cereal to emphasize that it is not related to wheat.

Introduction:

Radishes are an edible root vegetable that comes from the cabbage family, and it is believed that they originated in China. There is evidence of them in Egypt before the pyramids were built, and the Romans were known to grow a great many varieties of them. The name is derived from the Latin Radix, which means root. They are a staple in both China and Japan, where they are pickled in brine.

Precautions:

As of this writing, there are no known precautions that need to be taken when consuming radishes. In extremely rare cases, people with allergies to items in the mustard family may have a problem.

Introduction:
Broccoli seed is the source of broccoli sprouts, the most potent natural source of sulforaphane glucosinolate, a natural compound found in broccoli and other cruciferous plants that supports the body's antioxidant functions. Broccoli sprouts are added to salads, soups, pestos, pizzas, and wraps for flavor and texture. Try them as an addition to Greek salads, sun-dried tomato dishes, guacamole, tortilla soup (added just before serving), tofu, carrots, or as a side dish all on their own with a little vinaigrette.

Precautions

SG is cancer-protective by virtue of its action on the liver. The SG found in abundance in broccoli sprouts and in lesser concentrations in raw, steamed, and stir-fried broccoli, cabbage, cauliflower, kale, mustard, and watercress activates phase 2 detoxification enzymes that convert environmental toxins into water-soluble forms that can be removed by the kidneys. Three- day-old broccoli sprouts contain 20 times the concentration of sulforaphane glucosinolate found in mature broccoli.
SG is heat stable but water-soluble. Sprouts can be eaten raw, steamed, stewed, or even fried, but they should not be boiled.

Summary:

Touted as being the new 'superfood', Chia seeds are high in easily digestible protein, essential fatty acids, vitamins, soluble fiber, antioxidants, minerals, and are a digestive, disinfectant, febrifuge and ophthalmic. They are currently being used for their nutritional and medicinal properties, endurance for athletes, for suppressing the appetite, weight loss, leveling blood sugar, and for aiding intestinal regularity. Chia seeds readily dissolve into the water, creating a substance that looks like gelatin. This gel-forming action is due to the soluble fiber in the Chia seed. Researchers believe that this same gel-forming phenomenon takes place in the stomach when Chia seed is consumed, thus creating a physical barrier between carbohydrates and digestive enzymes and slowing the conversion of carbohydrates into sugar. Slowing the conversion of carbohydrates into sugar helps with endurance and metabolic rates, which is beneficial for athletes and others. For weight loss, Chia seeds are an appetite suppressant, and Chia gel may be used to replace food within recipes. Bulking up a meal with Chia gel helps lessen the amount of food consumed, since Chia gel is primarily made up of water. Chia gel may also be used in place of fats within recipes, even within baked goods. Chia seed has hydrophilic properties, and can absorb more than 12 times its weigh in water. Because of this, Chia seeds can prolong hydration, helping retain moisture and regulate more efficiently the body's absorption of nutrients and body fluids, including electrolyte balance.
